STEPS TO MAKE THE PERFECT BLUEBERRY DANISH TWIST BRIOCHE BREAD DESSERT
💡Here are a few things to know before you start creating this recipe:
- Make sure your butter and milk are at room temperature, this will help it rise well.
- I recommend using fresh blueberries. Frozen blueberries will release too much liquid.
- Allow the dough to rise, patience is golden.
- Use whole milk preferably but it is not necessary. Whole milk will make your dough softer.
Here are the basics on how to put this pastry together:
- Combine ingredients for the dough, set it aside for 2 hours and allow it to rise. Don’t be in a rush.
- Mix together cream cheese frosting ingredients and place into the fridge until your dough rises.
- Roll dough out and slit from the center, spread the cream cheese mixture and sprinkle your fresh blueberries on top of your bottom layer.
- Cut dough from the center, do not cut passed 1/4 of an inch from the top. At this point, twist both ends together and fold under to make into a knot.
- Bake Pastry: Line up pastry on baking pan and bake – make sure not to over-bake or under-bake. Your pastry should be lightly browned. We want them to be pure deliciousness!

Blueberry Danish Twist Brioche Bread Dessert
This Blueberry Danish Twist Brioche Bread – Fresh Out of the Oven is amazing! I LOVE a traditional sweet Danish Pastry and Fluffy Brioche Bread right out of the oven! So I decided to combine both recipes into one and created these beautiful, tasty, buttery layers of goodness, topped with my creamy, sweet, light, and airy frosting – it is absolutely AMAZING!
Ingredients
DOUGH
- 5 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 1/2 teaspoon instant or active dry yeast
- 1/2 cup lukewarm milk
- 1 tablespoon lukewarm milk
- 5 large eggs
- 1 cup unsalted butter
- 1 1/2 teaspoon salt
- 1 egg (egg wash)
- 1 1/2 cup fresh blueberries
CREAM CHEESE FROSTING
- 8 oz cream cheese
- 1 tablespoon liquid vanilla extract
- 1/2 cup powdered sugar
Instructions
- Start by softening the butter. In a standing mixer w/hook, add milk, yeast, and sugar. Allow this to sit until the yeast becomes foamy. Add remaining eggs, sugar, 4 cups of flour, and salt. With a mixer, mix on low speed for 5 minutes until it forms into a sticky dough, and cut butter into small cubes. While mixing, add 2 cubes of butter at a time. Make sure the cubes are fully dissolved and mixed before adding another set of cubes.
- Gradually add the last cup of flour. Mix on medium speed for 10 min until the dough comes
together and pull away from the bowl. Drizzle oil inside a bowl, place the dough inside, and cover with a damp towel. Leave aside for 1.5-2 hours. (Dough must double in size.) - Start to preheat the oven to 390 degrees. After the dough rises, take it out and put it onto a flat surface. Deflate it gently and divide the dough into 4 pieces. Roll all 4 pieces into a ball. Roll dough out with a rolling pin about 6’’ x 4’’ in length making sure to cut around the edges of your rolled dough to make them with clean and straight edges.
- To make the frosting, add cream cheese, egg white, vanilla, and powdered sugar, and mix until it becomes creamy. Roll out a second dough the same size as the first one. Apply a thin layer of frosting onto your first dough, then add fresh blueberries, then place the second dough on top of the bottom layer and blueberries.
- Cut the dough from the center, leaving about ¼ ‘’ from the top. Press down gently on the sides of the dough to close. Carefully fold both ends of the dough and twist together. Fold both tips under to form a knot.
- Place the pastry on a non-stick baking sheet and place them 3″ away from each other. Bake the pastry for 25-30 minutes until golden brown. May need to be baked longer depending on the oven. Place pastry on a cooling rack for 5 minutes. Drizzle frosting on top and enjoy!
