This Zhingylov Hats recipe is popular in our household therefore, I have to share this wonderful snack with you all! It’s made with a homemade flatbread stuffed with fresh mixed green herbs, salt, pepper, and some lemon. The greens and herbs give off an amazing flavor so you don’t need to add any other flavors to it! After all, keeping things simple is the best! I gotta say, I fell deeply in love with the earthy natural flavors that it gives off and indeed you will too!
YumFRESH GREEN HERBS TO CHOOSE FROM TO MAKE ZHINGYALOV HATS
This recipe is a traditional dish made by Armenians from Artsakh and Syunik. It is also known as Zhingylov hats or Jingalov hats. Despite how you name it, it tastes the same and the taste is what matters!
Zhingylov hats are usually made with diverse mixed greens ranging from 7 to 20 herbs. Generally, you can use whatever greenery you like but here are a few of our favorite greens and herbs we used (Parsley, Italian parsley, mint, dill, cilantro, spinach). As I have noted above, the ingredients in this recipe are mostly greens and herbs and a small amount of seasonings. You can use different variations of greens in this recipe. Keep in mind and be careful about which herb to use, because some have strong sour tastes and aromas. I prefer not to mix too many sour greens in my recipe, instead, I use lemons for that refreshing sour taste!
Here is a list of options to choose from. You can use Tarragon if you like, but I recommend that as long as you take it easy on the greens, you will have a perfect balance between sour and savory.

THE KEY TO MAKING ZHINGYALOV HATS IS THE HOMEMADE THIN DOUGH FROM SCRATCH!
The secret to this recipe is rolling the dough as thin as you can, so you can see the greenery right through it. Allow your dough to rest while you chop your greenery and herbs. Usually, Zhingyalov Hats is made with a simple bread recipe that includes water, flour, salt, and oil; but I find that doing it the traditional way makes it harder to roll out your dough thin. The texture of the dough resembles a lot like the Lavash flatbread recipe.
Ideally, you can eat these for breakfast, lunch, snack, or next to dinner! You can enjoy your hats with an egg for breakfast, a snack, or served next to a fresh plate of kebob!

STEPS TO MAKE THIS TASTY ZHINGYALOV HATS
Step 1 - PREPARING DOUGH
Start by adding your dry ingredients into a large mixing bowl and then add your wet ingredients. Knead dough for 5 minutes until a sticky dough forms (it's best to keep your dough sticky). Place the dough back into the bowl, put a towel over it, and let it rest for 30 minutes at room temperature. This will allow your dough to soften up and make it easier to roll out later.
Step 2 - CHOP GREENERY AND SEASON
Time to chop your greenery! Make sure to chop them into small pieces, but not too small!🌿After chopping your greens add seasonings, lemon, and oil. Combine all together.

Step 3 - ROLL DOUGH AND STUFF FILLING
Once you've floured your surface, form the dough into a loaf and separate it into 8 pieces; 4 ounces each. Form the dough equally into small balls with the palm of your hands and place a towel over them. Place one dough ball at a time on a floured surface. Press against it to flatten the dough out with the palm of your hands. Roll the dough with a floured rolling pin in a long oval shape. Place about two large tablespoons of the greenery in the center of the dough; pinch your dough edges together to close the flatbread. Turn the flatbread seam-side down and firmly press against the flatbread with your fingertips. The thickness should be about 1/4" thin.
Step 4 - COOKING TIME!
Lastly, preheat your skillet or cast iron pan on high heat for 15-20 minutes. Then turn the fire on medium heat and place flatbread hats seam-side down. Allow this to cook for 2-3 minutes until you see one side browning. Turn over to the other side with a spatula and cook the other side. While you cook the rest of the flatbreads, place a towel over the finished ones to keep them warm and now it's time to enjoy!
💡Quick Tip: Once cooked you'll be able to reheat your Zhingylov Hats by placing them into a preheated oven at 400° for a few minutes until crispy.

- 2 cups All-purpose Flour
- 1/2 cup Sour Cream
- 1 teaspoon Salt
- Pinch of Sugar
- 3/4 cup Water
Filling Greenery – (Approximately 8 cups washed and well-dried greens)
- 1 bunch Cilantro
- 1 bunch Mint
- 1 bunch Spinach
- 1 bunch Parsley
- 2 bunches of Green Onions (scallions)
- 1–2 small Lemons
- 2 Garlic cloves
- 1 teaspoon Salt (salt to your taste)
- 1 teaspoon Black Pepper
- 3–4 tablespoons Olive Oil
- 1 Teaspoon Chili Powder (optional)
Instructions

- Make sure to keep your dough sticky, don’t over flour while kneading.
- Allow your dough to rest, this is important.
- Make sure to form your flatbread so that the middle is wide and the ends are pointed out.
- While you cook the rest of the flatbreads, place a towel over them to keep them warm.

It's not recommended. Once you freeze fresh greens, it will release its juices and will not allow the dough to cook. If you pre-cook your fresh greens before stuffing your dough, you will be able to freeze your Zhingylov Hats.
