Firstly, I would like to say that Mediterranean cucumber and tomato salad with crispy pita chips has been my GO-TO salad lately! This vibrant and delicious salad is so refreshing and so good! Basically, it’s filled with cucumbers, tomatoes, and green onions, drizzled with olive oil, red wine vinegar, herbs, seasonings, and my homemade pita chips! However, if you are looking for a light and refreshing salad on a nice hot day, this salad is perfect. Above all, I cannot wait to show you my homemade, crunchy Parmesan-seasoned pita chips.
YumThis authentic Mediterranean salad is so fresh and so good! This salad is usually compared to another Lebanese salad called Fattoush which is usually served during Ramadan and is also very delicious but I changed my salad to my liking and added and replaced a few ingredients. Although this salad is “just a salad” it’s a salad that is unforgettable!
Indeed, I loved the fact that this salad uses Danish cheese which is more on the creamier side and it still crumbles like feta. In addition, one advice I have is DON’T OVERMIX! Another key point is that I would recommend adding the cheese way at the end when adding your pita chips. So in other words, follow my steps 1-2 by adding your cheese before you add your pita chips and give it a light toss. Overall, as long as you don’t over-mix, it will allow your cheese not to blend in too much so you can enjoy the large chunks of cheese every time you take a bite.
As soon as I finish bragging about this salad, I can’t wait to show you my homemade pita chip recipe! Sometimes pita does get dried and tough when lying around uncovered for too long. But, there are many creative ways to use the extra pieces of Pita bread so it won’t go to waste! Despite how great this recipe looks, it tastes amazing, too! - Olive Oil
- Parmesan Cheese
- Salt
- Mint
- Basil
- Oregano

- Sumac
- Turmeric
STEPS TO MAKE THIS MEDITERRANEAN SALAD
CHOP VEGETABLES
Firstly, cut all cucumbers at the same time to save time – into four slices and then chop them into 1/4-inch pieces. Overall, do the same with the tomatoes. Secondly, slice the green onions through the center of the core and chop as fine as you can. Remove leaves from the stem of the purple basil and chop them up. Place in a medium-sized mixing bowl.
DRESSING
Lastly, in the same bowl add olive oil, red wine vinegar, seasonings, crumbled cheese, zaatar, green olives and mix it all. Afterward, garnish the salad with pita chips and enjoy your crunchy salad. At last, now it’s time to enjoy!

Ingredients
VEGETABLES IN SALAD
- 4 Persian Cucumbers

- 6 stems Green Onions
- 1 small bunch of Purple Basil
SALAD DRESSING
- 4 tablespoons Olive Oil
- 3 tablespoons Red Wine Vinegar
- 1/2 teaspoon Salt
- 1 teaspoon Black Pepper
- 1/4 tsp Chili Powder
- 1 cup crumbled Danish Cheese or Feta of your choice
- 2 tablespoons Zaatar Seasoning
- 8 large Pickled Green Olives Stuffed With Peppers
TOPPING
- 4 slices of crispy Pita Chips
Instructions
- Cut all cucumbers into four slices and then chop them into 1/4-inch pieces. Do the same with the tomatoes.
