What is Olivier Salad?
Olivier Salad is a Russian salad originated by a chef named Lucien Olivier in the 1860’s. He was a Top Chef at a restaurant called Hermitage in Russia. His salad hit big and made this restaurant’s reputation plunge in popularity as its signature dish! This salad became very popular in the Soviet Union and in many other countries as well. Olivier salad is usually prepared by boiling veggies, dicing them and adding mayonnaise, and adding salt. My family adds sour cream for a lighter, more airy texture. You can try other options with the type of meat you would like to use. It is made differently depending on the origin, sometimes they place diced chicken, sausage, ham, or hotdog.
Traditionally, this salad is served during family gatherings, special events, holidays, or large parties. But this salad is pretty simple and so good it’s perfect to serve any time of the year. So, instead of making a simple potato salad to take with you to a potluck, try taking something different, you won’t regret it. It will be the talk of the whole party, I promise!

This salad will last up to 4 days in a well-sealed container in the refrigerator. I noticed this salad tastes better the day after it’s made because its flavors get all in there! If you keep your potatoes and veggies separate from the meat and salad dressing, this will also prolong your salad for up to a week.

- DRAINING TIPS: Make sure to drain our pickles and peas before placing them into the salad. The excess liquid can ruin the texture and taste of the salad.
- PEEL AND BOIL: potatoes, and carrots at the same time and allow them to cool off completely before chopping.
- PREPPING TIME: Give yourself plenty of time to prepare salad, the chopping takes most of your time. So be prepared to chop for a while. I don’t prefer a vegetable chopper if you choose to use one because I noticed it will make your pieces mushy.😉
- MIXING: Make sure when mixing ingredients together, don’t mix by mushing them. Mix ingredients by gently folding over and not musing down with your spoon.
STEPS TO MAKE THIS OLIVIER SALAD
Start by adding peeled potatoes, and carrots into one pot boiled in water on high heat for 20-30 minutes. Pierce potato and carrots with a fork and remove from boiling water. If the fork goes through smoothly it’s time to remove from pot. Boil eggs for 10-12 minutes. Remove eggs from boiling water, set under cold water, and allow them to rest to easily peal off.
Chop all your boiled vegetables, eggs, and bologna and fresh dillweed into very small pieces as small as you can get them.
Add mayonnaise, sour cream, and salt to your chopped ingredients and combine. Mix ingredients by gently folding over and not mushing down with your spoon. Time to Enjoy! 😋

- 6 regular size Potatoes
- 4 large Eggs
- 3 large Carrots
- 2 oz canned Peas
- 1/4 lb Eurika Doctorskaya (preferred) Bologna
- 4 Russian or Middle-Eastern Pickles
- 1/2 cup Dillweed
- 4 Green Onions
Salad Dressing
- 2 1/2 tablespoons Mayonnaise
- 1lb (453g) Sour Cream
- 1 tablespoon Salt (to our taste)
