At this point, all you’ll need for this recipe is some herbs, spices, breadcrumbs, and my other special ingredients like cinnamon, onions, garlic, and cheese
Although these baked tasty chicken meatballs are so yummy, they are also healthy too! Another key point is, you have a choice to fry them or bake them. However you choose, you can cook them either way. But, I highly recommend baking them. Basically, they taste great if you bake them and you’ll use less oil! Plus, if you pan-fry them, they do tend to fall apart in the oil because they tend to soak up too much oil this way.
If you’re like me who loves cinnamon, then this sauce is for you! But if you’re not a fan of cinnamon, you can always exclude this spice from this recipe. I wanted to create a warm and fun sauce to pair up with these crispy chicken balls, so I added some cinnamon to give it that extra kick! Although this sauce tastes amazing just the way it is, you can also change the sauce by adding or replacing some ingredients with these common seasoning choices; basil, oregano, thyme, garlic powder, onion powder, red pepper flakes, and black pepper.
These ingredients are another alternative to the overall taste. You can also try changing it up by switching the tomato sauce with a cream sauce like our Creamy Chicken Mushroom Capellini Pasta. I love making this fast and easy meal, especially when you want the perfect next-day left-over or a fast and easy lunch!

💡Here are a few things to know before you start creating this recipe:
- If your chicken was previously frozen, make sure to completely defrost and drain your ground beef before preparing the mixture.
- Must grade your onion and not chop. This allows your chicken to be tendered.
- As you shape your chicken meatballs make sure to dampen your hands this helps with the process.
- To use less oil or no oil at all, place your chicken meatballs on a silicone liner.

Ingredients
Chicken Meatballs
- 1 lb ground chicken leg meat (preferred)
- 1 Onion
- 3 tablespoons cajun seasoning
- 1/2 cup parmesan cheese
- 1/2 cup of parsley
- 5 garlic cloves
- 2 egg yolks
- 1 1/2 teaspoon of salt
- 1 cup of panko
Sauce
- 1/4 cup olive oil
- 5 chopped garlic cloves
- 1 15 oz tomato sauce
- 1 8 oz stewed tomatoes
- 1 teaspoon allspice
- 1 1/2 teaspoon dry basil
- 1/2 teaspoon black pepper
- 1/4 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup shredded monterey jack cheese
Instructions
- Start by shredding your onion. Add onion, cajun seasoning, parmesan cheese, and parsley to the ground chicken mixture. Grind garlic and beat egg yolks together and add to chicken mixture.
- Dampen your hands with some water and roll into approximately 12 meatballs and place on a lined baking tray with a silicone liner or parchment paper. Spray chicken meatballs with cooking spray place them into the oven and bake for 20-25 min until slightly firm.
- While meatballs are cooking, cook pasta according to package instructions. Next, start preparing sauce by adding olive oil and garlic to a saucepan. Cook for 2 min on high heat.
- Add tomato sauce and stewed tomato and stir together. Let this simmer for 3 minutes on high heat. Add allspice, and basil and allow this to cook for another minute. Add black pepper, cinnamon, and salt and simmer for another 5 minutes on low heat.
- Add shredded mozzarella cheese and cook until cheese melts on low heat. By now your chicken meatballs should be done and can be carefully removed from the oven. Add pasta to a serving plate and top it with sauce. Place meatballs on top and Enjoy!
