The best part about this salad is that it’s all made in one bowl and comes together in just 5 minutes! This super easy salad offers a delicious combination of sweet, savory, and nutty flavors. It’s also perfect for meal prepping—you can chop everything in advance make your dressing on the side, store it in a mason jar, and throw everything together when you’re ready to enjoy or serve! It pairs wonderfully with my barbecued shish kebabs, a bed of fluffy buttery rice, and a glass of wine on a beautiful summer day!
This perfect side salad is not only beautiful but also tastes amazing, especially with my sweet Asian dressing. The dressing is made with seasoned rice vinegar, sesame oil, freshly grated garlic, sweet applewood mustard spread, and a pinch of sugar and spice. I’ve also added chickpeas, crumbled feta, sun-dried tomatoes, roasted sesame seeds, and a dollop of sour cream. For extra crunch, I love topping my salad with roasted nuts instead of carb-heavy croutons!

Tips before stating:
If you’re using a regular cucumber (not a Persian cucumber), I recommend cutting it lengthwise, and then using a spoon to scrape out and remove the inner pulp. Leaving the pulp can make your salad too soggy.

STEPS TO MAKE THIS CHICKPEA TOMATO & CUCUMBER SALAD W/ SUN-DRIED TOMATOES
Step 1: (You will be using one bowl for this recipe)
Chop your cucumbers, tomatoes, green onions, and parsley and place them into a large mixing bowl. Drain and wash your chickpeas and place them into the same bowl.
Step 2: (In the same bowl) Add grated garlic, crumble your feta cheese (not easy to crumble because it’s super creamy, so do your best and crumble it), sun-dried tomatoes (drained), sesame oil, seasoned rice vinegar, roasted sesame seeds, sugar, sweet applewood mustard (or Honey Mustard), sour cream, and give it a toss to a light coat but don’t over mix!

HOW TO STORE THIS CHICKPEA TOMATO AND CUCUMBER SALAD
If you are meal-prepping and want the best freshness, it’s best to store chickpeas and chopped veggies in a well-sealed container. They will last for up to 2 days in the refrigerator. You can also prepare your dressing in advance and store it in a mason jar for up to 5 days in the refrigerator.
If you are going to keep this salad overnight, I recommend not mixing it all together and keeping it separately. Cucumbers and Tomatoes might become soggy and release their liquid within a few hours. It’s best to make and eat right away!

- 1 tablespoon Sugar
- 1 Fresh Garlic Clove
- 1 1/2 tablespoons Roasted Sesame Seeds
- 2 tablespoons Sesame Oil
- 4 tablespoons Seasoned Rice Vinegar
- 1/4 cup French Sweet Applewood Mustard Spread (or Dijon Honey Mustard)
