Occasionally, on Saturday mornings, I’d wake up with the smell of fava beans simmering with an aroma of cumin and hearing the tea kettle whistle to wake up. Some wake up to the smell of coffee in the mornings, but this was my favorite smell to wake up to! These memories are unforgettable and make this dish even more flavorful because they’re full of memories!

What is Foul (Ful) Medames?
Foul (Ful) Medames is a Middle Eastern breakfast dish made with mashed fava beans mixed with Tahini, lemon juice, garlic, and other various spices. It is topped with tomatoes, green onions, chopped parsley, and some hard-boiled eggs. Additionally, this dish is known to be popular in Egypt, Lebanon, and other Middle Eastern countries.
Depending on what part of the Middle Eastern country it is made in, some, for example, would add different twists to this traditional dish. In addition, some make it spicy by adding Cayenne Pepper, chili flakes, or fresh chili peppers. A variety of herbs can also be added, such as mint, dill, or cilantro to bring in more flavor. As a matter of fact, this dish has a super creamy texture! You can also add garbanzo beans along with fava beans to make this dish.
Why is Foul known as a Stew?
The reason why Foul is called stew because some people like to leave their fava beans “whole” eliminating the smashing step and keeping its juices. Although Foul can be made by leaving fava beans as is, semi-mashed or completely mashed, I prefer my Foul semi-mashed I love the texture it gives! 🍴INGREDIENTS YOU’LL NEED TO MAKE THESE THIS FOUL (FUL) MEDAMES

- Tahini
- Water / Canned Fava Bean Juice
- Lemon
- Cumin
- Salt
- Chili Powder or Allepo Pepper
- Extra Virgin Olive Oil
IF USING DRY FAVA BEANS:
We are using canned Fava Beans for this recipe. If you use dry Fava Beans, make sure to soak overnight and rinse after. Place fava beans in a deep skillet, fill with water over soaked beans, and boil for 1 hour until they have softened and tendered.
Tips Before Starting this Recipe!
- If you like to keep your Foul as a stew, do not mash it and keep it a little on the watery side. If you want some texture, slightly mash by keeping some fava beans whole. The amount of water you add is all in your preference.
- When draining fave beans keep the canned juices. If you prefer to use water then disregard canned juice.
- Depending on the brand of fava beans some tend to dehydrate faster than others while cooking. If you notice your fava beans drying out, add water or canned juice and rehydrate them.
- I would recommend chopping your fresh herbs and veggies ahead of time! Some like to serve it with different fresh herbs, boiled eggs, pickles, olives and hot pita. If you like to avoid eating it with bread, you can serve it with some lettuce leaves.

STEPS TO MAKE THIS FOUL (FUL) MEDAMES
First, chop veggies before starting your fava bean stew. Then, drain fava beans from the can and place them into a deep skillet. On Medium-High heat add about 1/2 cup water or canned water to your fava beans (see tips above). Season with cumin, and crushed garlic. Mash ingredients with a potato masher or the back of a fork and turn your fire to low-medium heat. Mash it to the consistency of your preference (see tips above).
Serve on a plate or a bowl and top your dish with your favorite veggies. We added chopped tomatoes, green onions, and cilantro. Drizzle some extra virgin olive oil to the top and sprinkle your choice of spice. We used Allepo Pepper along with a hot pita, and time to Enjoy!

Ingredients
- 2 16 ounces plain canned Fava Beans
- 2 or 3 tablespoons Tahini
- 1/2 cup Water or 1 Canned Fava Bean Juice
- 1 1/2 large Lemon juice
- 1 teaspoon Cumin
- pinch of Salt
Dressing/Toppings
- 1 large fresh diced Tomato
- 1/2 cup of chopped Cilantro
- 1/2 cup chopped Green Onions
- pinch of Chili Powder or Allepo Pepper
- 1 tablespoon Extra Virgin Olive Oil
Served With
- Warm Pita Bread
Instructions

- Serve in a plate or a bowl, place your choice of toppings ontop. Drizzle some extra virgin olive oil to the top and sprinkle your choice of spice, serve with a hot pita.

I like to use the brand TAZAH – Fava Beans (Foul Medammas). I notice this brand is very meaty and love its texture.
No, some do not put tahini in Foul Medames. But I prefer it because I grew up with it that way and it brings in more of a creamier texture and it enhances its nutty flavors!
No, Foul Medames is not keto due to it being high in carbohydrates.
I wouldn’t recommend it due to making the consistency and texture change. But if you want to you can, just freeze without toppings added. Add it to a warm skillet without thawing on low heat and add water if needed.
Place Foul Medames in an air-tight sealed container after it has completely cooled off. Drizzle some Olive Oil over it to preserve and not dry out while it stays in the fridge.
Foul Medames can last up to a week in an air-tight sealed container with olive oil drizzled on top.
