Foul (Ful) Medames Creamy Fava Bean Stew
This authentic Foul (Ful) Medames Creamy Fava Bean Stew is a Vegan dish that is made with mashed fava beans, tahini and added with more amazing flavors like cumin, garlic, spice of Aleppo Pepper and some lemon! Another great thing about this recipe is, that this savory meal is full of nutrients and full of protein which will fill you up! It’s super easy to make and it’s also great to eat any time of day, for breakfast, lunch, and even dinner! It only takes 15 minutes to make, so let’s do this!

- 2 16 ounces plain canned Fava Beans
- 2 or 3 tablespoons Tahini
- 1/2 cup Water or 1 Canned Fava Bean Juice
- 1 1/2 large Lemon juice
- 1 teaspoon Cumin
- pinch of Salt
Dressing/Toppings
- 1 large fresh diced Tomato
- 1/2 cup of chopped Cilantro
- 1/2 cup chopped Green Onions
- pinch of Chili Powder or Allepo Pepper
- 1 tablespoon Extra Virgin Olive Oil
Served With
- Warm Pita Bread
Instructions
- Chop veggies. On Medium-High heat add drained fava beans and 1/2 cup water into a small skillet or sauce pan. Add cumin, and crushed garlic and mash ingredients with a potato masher or the back of a fork and turn your fire to low-medium heat and simmer for two minutes.
- Serve in a plate or a bowl, place your choice of toppings ontop. Drizzle some extra virgin olive oil to the top and sprinkle your choice of spice, serve with a hot pita.
Notes
- If you like to keep your Foul as a stew, do not mash it and keep it a little on the watery side. If you want some texture, slightly mash by keeping some fava beans whole. The amount of water you add is all in your preference.
- When draining fava beans keep the canned juices. If you prefer to use water then disregard canned juice.
- Depending on the brand of fava beans some tend to dehydrate faster than others while cooking. If you notice your fava beans drying out, add water or canned juice and rehydrate them.
- I would recommend chopping your fresh herbs and veggies ahead of time! Some like to serve it with different fresh herbs, boiled eggs, pickles, olives, and hot pita.
