All in all, I stirred up this refreshing and healthy meal one late afternoon for my family and only had a handful of ingredients to work with! After posting it on Instagram, I received so many requests to post this recipe on my blog so here I am, putting this simple meal I stirred together in just 30 minutes.
This zesty chicken is made with Honey Mustard flavors and sauteed in a little bit of Olive Oil until it’s seared to perfection! After all, this salad is perfect once you pair it with this zesty Honey Mustard chicken, it adds a sweet delicious contrast to this dish!
In addition, let me tell you a little bit about my favorite salad! I LOVE PINAPPLES in anything! I love their taste, smell, and look! They are just so pretty, too! And yet, I LOVE it in my food, especially in a nice salad! This tropical pineapple salad resembles a coleslaw-like dressing with a light sweet vinegarette creamy dressing, and cabbage to give it a crunch, pineapples that give a sweet twist that combines perfectly with my zesty chicken.
Finally, a side of my fluffy Orzo rice that pairs perfectly with my sweet vinegar dressing! Perfect meal combo! In the end, this meal is a perfect blend! Or skip the rice and make it a low-carb meal and make lettuce wraps! Top your chicken lettuce wraps with your salad and make it a night!

HOW DOES MUSTARD TENDERIZE CHICKEN?
Basically, mustard is highly acidic making it a perfect choice for tenderizing! Not only does it taste great and give it such an amazing zesty flavor, but it also does a great job coating and keeping your chicken moist while cooking! If you’re not a fan of mustard, don’t worry, the honey that’s added lightens up the mustard taste and helps balance its flavors! We also added a pinch of lemon juice that tenderizes your chicken to create moist tender chicken strips!
WHAT OTHER WAYS CAN YOU COOK HONEY MUSTARD CHICKEN?
If you don’t mind firing up your grill, I highly recommend doing so! Giving a good BBQ sear is better in my opinion! But if BBQ isn’t an option then sauteing it in a frying pan with a light olive oil will also do the trick! Both have their unique tastes but the BBQ option is my first choice! I always love a good BBQ! If you plan to BBQ your chicken, make sure you marinate the night before to get those flavors in, create a separate marinate of the same ingredients and brush on a few minutes before removing from the grill! You can also broil your chicken in a little olive oil in the oven which also gives it a unique and rich flavor of its own!

Most people I know always question my interest in pineapples. On pizza, in salads… I’m always called out for loving them so much in my foods! Not only are pineapples sweet and delicious, they come with many health benefits. Pineapples are known as bone strengtheners and can cut the life of bacteria and viruses short! They also help reduce inflammation in your body which is amazing! Pineapples are highly nutritious and can give you a hit of vitamin C! Who needs loads of processed unnatural juices when pineapples naturally can do the job for you? These are just a few benefits of pineapples! Basically, there are many other benefits with these delicious fruits, it may be worth getting out of your food comfort zone for the health benefits!

🍴INGREDIENTS YOU’LL NEED TO MAKE THIS HONEY MUSTARD CHICKEN W/ PINEAPPLE SALAD

FOR THE CHICKEN MARINADE
- Boneless Chicken Leg Meat

- 2 cups Rose rice
- 1/2 cup of Orzo Pasta
- 1 tablespoon Olive Oil
- 1 teaspoon Salt
- 4 cups of Water

STEPS TO MAKE THIS HONEY MUSTARD CHICKEN WITH PINEAPPLE SALAD
Step 1: First, chop your chicken into strips about 1″ thick and combine honey, mustard, salt, pepper, garlic powder, chicken seasoning, and lemon juice and combine. Place this into the refrigerator for about 1 hour or overnight.
Step 2: (Salad) Chop your tomatoes, cucumbers, and green onions into small cubes. Chop your cabbage into thin strips (if you want a softer crunch to your bite, chop your cabbage as thin as you can get them). If using canned pineapple, drain and chop into cubes. Lastly, drain corn and pour over your chopped veggies then chop your cilantro and combine all your chopped veggies together (excluding pineapples) and set aside (also, you can use fresh pineapples if you prefer.)
Step 3: Heat Olive Oil in a large pan on medium heat. Place chicken in a pan and spread out onto one layer (keep chicken marinade juices if any are left). Allow to cook for 3-5 minutes until browned on one side. Depending on the size of your pan, you might have to cook chicken in two separate batches (as you cook the second batch make sure you place chicken into a bowl and cover with foil).
Step 4: Meanwhile, as you’re waiting for your chicken to finish cooking, start preparing your salad dressing. In a small bowl, mix; sour cream, rice vinegar, salt, sugar, and olive oil and set aside. Once your chicken is done cooking, mix your salad ingredients pour dressing over, and give it a full mix when you’re ready to serve.
Step 5: Once you have cooked all your chicken place both batches of chicken back into your pan and pour marinade that was leftover into your pan. Sear your chicken on high heat for another 3 minutes until you achieve a golden look.
Lastly, this chicken should have a thickened glazed sear over it once done. Transfer to a serving dish and drain any extra oil before serving. In addition, serve next to your choice of rice. We served ours with a simple Orzo rice. Enjoy my friends! 🤗

Ingredients
FOR THE CHICKEN MARINADE
- 3 lbs Boneless Chicken Leg Meat
