Jajukh or jajig/jajik was served in my house next to each BBQ event we had! It was a must for every Armenian event, holiday, you name it we had it on our table! You can have Jajukh in so many ways! I have had it as a dip, a salad with dry mint, with fresh mint, with spinach in replace of cucumbers, with dill instead of mint. This salad comes in so many versions, but this recipe is my favorite! WHAT IS JAJUKH?
Jajukh is a classic dish that’s popular throughout Armenian cuisine. This salad is similar to a traditional Greek salad called Tzatziki which is made with Dill instead of Mint. This Jajukh recipe is essentially a yogurt-based appetizer, featuring a mix of yogurt, cucumbers, garlic, and fresh mint. Typically served chilled, it’s a refreshing and nutritious dish, perfect for cooling off on hot summer days or as a light starter to a meal. With its blend of creamy yogurt and wonderful flavors, Jajukh shows off culinary uniqueness!

🍴INGREDIENTS YOU’LL NEED TO MAKE THIS JAJUKH – REFRESHING YOGURT SALAD

- Yogurt (Fat-free/whole – your choice)
- Persian Cucumbers
- Fresh Mint (dry mint – your choice)
- Garlic
- Water
- Salt
Tips Before Starting this Recipe!
- Some remove the center seeds of the cucumber due to slushy texture. I leave it, it is completely up to you.
- This recipe contains dry mint, however, I prefer fresh mint due to its stronger flavor. In my opinion, dry mint gives off an unnatural dry taste.
- If you plan to use a vegetable grater make sure to set it to the thinnest level (0-1). If you are chopping the cucumbers by hand make sure it is about 1/8th of an inch thin. Some choose to chop the cucumbers into cubes, it is your choice.
- This salad is supposed to be served cold. Make sure to place it into the fridge before serving.
- Keeping this salad in the fridge overnight will bring in those flavors better!
STEPS TO MAKE THIS JAJUKH – CUCUMBER SALAD
Chop the cucumbers, fresh mint, garlic and combine with yogurt. Place into a bowl, and cover with a lid.
Place this mixture into the fridge for at least 1 hour or overnight for best-tasting results.
Add salt and gradually add water to the consistency you like and Enjoy!

- 6–8 Persian Cucumbers
- 1/2 cup Fresh Mint (dry mint – your choice)
- 4 Cloves Garlic
- 2 ounces Water
- 1 teaspoon Salt
