Jajukh | Refreshing Yogurt Salad with Cucumbers and Mint

Sit down, relax, and enjoy this cool, summer dish that will refresh you as the temperature outside rises. Jajukh is seriously amazingly delicious! It’s this super cool yogurt dish that’s all about fresh flavors. You mix tangy yogurt with Persian (your choice) cucumbers, fresh mint, and some garlic for that kick. It’s like a flavor explosion in your mouth! Whether you’re chilling with it on a hot summer day or pairing it with some yummy Armenian food, Jajukh is always a hit. It is simple to make, and wonderful to enjoy whether it’s in the morning, day, or afternoon!


Ingredients

  • 3 cups Yogurt (Fat-free/whole – your choice)
  • 68 Persian Cucumbers
  • 1/2 cup Fresh Mint (dry mint – your choice)
  • 4 Cloves Garlic
  • 2 ounces Water
  • 1 teaspoon Salt

Instructions

  1. Chop the cucumbers, fresh mint, garlic and combine with yogurt. Place into a bowl, and cover with a lid.
  2. Place this mixture into the fridge for at least 1 hour or overnight for best-tasting results.
  3. Add salt and gradually add water to the consistency you like and Enjoy!

Notes

  • Some remove the center seeds of the cucumber due to slushy texture. I leave it, it is completely up to you.
  • This recipe contains dry mint, however, I prefer fresh mint due to its stronger flavor. In my opinion, dry mint gives off an unnatural dry taste.
  • If you plan to use a vegetable grater make sure to set it to the thinnest level (0-1). If you are chopping the cucumbers by hand make sure it is about 1/8th of an inch thin. Some choose to chop the cucumbers into cubes, it is your choice.
  • This salad is supposed to be served cold. Make sure to place it into the fridge before serving.
    Keeping this salad in the fridge overnight will bring in those flavors better!
