This delicious cheesecake cup has a lemony cream filling with non-fat Greek yogurt, and fat-free cream cheese with pureed dates for that yummy crust. The best part about this recipe is, that it uses a very minimum amount of ingredients. Although it’s perfect for a simple go-to dessert after a nice healthy meal it’s a fun and beautiful dessert too!
I drizzled it with honey (not a sugar-free option), but you can choose any sugar-free topping that you prefer. Overall, this recipe is pretty delicious even by itself without any toppings! So, I’ll leave it up to you to decide!😋

- Low-fat Yogurt
- Fat-free “whipped” Cream Cheese
- Sugar-free sweetener Monkfruit
- Dates
- Almond Flour
- Lemon Juice (Meyer Lemon preferred)
- Lemon Zest (Meyer Lemon preferred)
- Honey or Agave (optional)
Note: I prefer using Meyer Lemons because they are sweeter than other lemons with only a slight tartness.
STEPS TO MAKE THESE LEMON CHEESECAKE CUPS
Step 1: Add ingredients for the cheesecake filling into a bowl and mix well.
Step 2: Add ingredients for date paste into a mortar or a food processor and mix until combined into a smooth date paste.
Step 3: Form the date paste into a ball and flatten with a pastel or your finger and flatten the date paste down into the bottom of the silicone cupcake pan.
Step 4: Place cream cheese in a piping bag and fill each cupcake to the rim. Place a silicone tray with filled cheesecake cups into the freezer and chill overnight until firm. Remove from the silicone tray and drizzle your favorite syrup. We used honey but if you want to keep it sugar-free use Agave if you like. Thaw out for 20 minutes before serving and enjoy!

HOW TO MAKE CANDIED LEMON SLICES
🍴INGREDIENTS: Water, Lemon and Sugar
Step 1: Wash and dry lemons. Cut lemon slices about 1/4″ thick, and set aside.
Step 2: In a small saucepan add 1 cup of water, 1 cup of sugar, and a squeeze of lemon. Bring it to a boil and reduce heat to medium-low add lemon slices one at a time and simmer for 5 min.
Step 3: Remove lemon slices gently onto a cooling rack. Let them rest for 10 minutes. Place back into boiling water and simmer for another 5 minutes until lemon slices look transparent. Place lemon slices on a cooling rack and allow them to air-dry overnight

These healthy no-bake cheesecake cups are so easy to put together and they only take 20 minutes to make! These adorable lemon cheesecake cups are sugar-free and have fewer calories so you can enjoy a nice dessert and not feel bad about it!
Ingredients
- 1 cup Low-fat Yogurt
- 4 oz Fat-free “whipped” Cream Cheese
- 3 tablespoons Sugar-free sweetener Monkfruit
- 10 pitted Dates
- 1/3 cup Almond Flour
- 1 tablespoon Lemon Juice (Meyer Lemon preferred)
- 1/4 teaspoon Lemon Zest (Meyer Lemon preferred)
- Drizzle your choice of syrup
Candied Lemon Slices – (not a sugar-free option see notes)
- 1 cup Sugar
- 1 cup Water
- 1/4 teaspoon Lemon Juice
- 1/4” sliced Lemon Slices (prefer Meyer Lemon)
Instructions
- In a small bowl, add Greek yogurt, cream cheese, monk fruit sugar and vanilla for the cheesecake filling and mix well. Add lemon juice and lemon zest.
- With a mortar or a food processor add dates and grind until pureed. Add almond flour and mix with dates until it turns into a paste.
- Spray oil into a silicone cupcake pan. Form the date paste into a ball and flatten with a pastel or your finger and flatten the date paste down into the bottom of the silicone cupcake pan.
- Place cream cheese in a piping bag and fill each cupcake to the rim.
- Place it in the freezer and chill overnight until firm. Remove from the silicone tray and drizzle your favorite syrup. We used honey but if you want to keep it sugar-free use Agave if you like. Thaw out for 20 minutes before serving and enjoy!
Notes
- If you use a full-fat Greek yogurt it will reduce the watery texture once thawed out. This is optional.
- I used honey in this recipe (not sugar-free) you can use your choice of sugar-free syrup.
- I prefer using Meyer Lemons because they are sweeter than other lemons with only a slight tartness.
