Mediterranean Cucumber and Tomato Salad
This vibrant and delicious salad is so refreshing and so good! It’s filled with cucumbers, tomatoes, and green onions, drizzled with olive oil, red wine vinegar, herbs, seasonings, and my homemade pita chips! If you are looking for a light and refreshing salad on a nice hot day, this salad is perfect. I cannot wait to show you my homemade, crunchy Parmesan-seasoned pita chips.

VEGETABLES IN SALAD
- 4 Persian Cucumbers
- 3 Roma Tomatoes
- 6 stems Green Onions
- 1 small bunch of Purple Basil
SALAD DRESSING
- 4 tablespoons Olive Oil
- 3 tablespoons Red Wine Vinegar
- 1/2 teaspoon Salt
- 1 teaspoon Black Pepper
- 1/4 tsp Chili Powder
- 1 cup crumbled Danish Cheese or Feta of your choice
- 2 tablespoons Zaatar Seasoning
- 8 large Pickled Green Olives Stuffed With Peppers
TOPPING
- 4 slices of crispy Pita Chips
Instructions
- Cut all cucumbers into four slices and then chop them into 1/4-inch pieces. Do the same with the tomatoes.
- Slice the green onions through the center of the core and chop as fine as you can. Remove leaves from the stem of the purple basil and chop them up. Place in a medium-sized mixing bowl.
- In the same bowl, add olive oil, red wine vinegar, seasonings, crumbled cheese, zaatar, green olives and mix it all. Garnish salad with pita chips and enjoy your crunchy salad.
Notes
One piece of advice after making this salad is – DO NOT OVER MIX! Also, I would recommend adding the cheese way at the end when adding your pita chips. So in other words, follow my steps 1-2 by adding your cheese before you add your pita chips and give it a light toss. This will allow your cheese not to blend in too much so you can enjoy the large chunks of cheese every time you take a bite.
