Simple Sweet / Sour Vinaigrette Beet Salad
This super Simple Sweet / Sour Vinaigrette Beet Salad is exploding with flavor! It is perfect any time of the year! Beets are always fun to create salads with because they have such a sweet taste to them! Because this salad is easy and one of a kind, it will seriously explode with amazing flavors in your mouth! This salad is loaded with sweet boiled beets seasoned with Basil, Thyme, and Salt, drizzled with Extra Virgin Olive Oil and vinegar. It’s made with one of my favorite vinegars ever made Mazzeti – Balsamic Vinegar of Modena, Italy! Its sweetness comes from the beets and sour comes from the vinegar it combines with! It’s SUPER EASY to make and So Yummy!

- 9 Beets
- 5 cloves Garlic
- 1/4 cup Extra Virgin Olive Oil
- 1 cup Balsamic Vinegar
- 1 teaspoon Salt
- 1 tablespoon Oregano
- 1 teaspoon Thyme
Instructions
- On medium heat, boil beets for 1 hour in water until you can poke a knife through them. Don’t overboil your beets. Poke through with a knife and make sure it’s slightly tough enough that the knife can go through without too much force. Set aside to cool off before peeling.
- Rub the peel off, chop the beets into thick strips, and place into a large bowl.
- Place Galic, Olive Oil, Balsamic Vinegar, Oregano, Thyme, and Salt and combine with your beets. Seal with plastic wrap, and place into the fridge for 2 hours (preferably overnight) for the flavors to seep in.
Notes
- Don’t overboil your beets, make sure the beet is firm, and test the beet by poking a knife through it and it should go in smoothly.
- You can remove skin from beets by rubbing it right off after it has boiled (use gloves to eliminate coloring your hands).
