YumWHAT IS THE DIFFERENCE BETWEEN CHINESE EGGPLANTS VS REGULAR EGGPLANTS?
I find that Chinese/Japanese eggplants have more of a sweeter and milder taste vs. regular eggplants and that is why I love to implement these types of eggplants instead of the regular eggplants.
Chinese/Japanese eggplants have thinner skin which makes them softer and more enjoyable to eat. Regular eggplants have tougher skin which makes it harder to chew and enjoy your meal (If you like to use regular eggplants, remove the outer layer of skin and prepare the same way).
Chinese/Japanese Eggplants have smaller and fewer seeds. There is a debate on what makes eggplants bitter. From what I have researched, the seeds might be the reasoning behind it all. To eliminate some of the bitterness, lay out your eggplants on a dry towel, sprinkle some salt, and allow this to sit for about an hour to dray out some of the moisture and bitterness before they’re cooked. Rinse off before you start preparing your meal.

Step 3: Once you add the ingredients for the sauce, add garlic and ginger and saute for 1 minute. Turn off the fire and add green onions. (see💡Quick Tip below) Combine everything and serve with a side of rice and enjoy!
💡Quick Tip: Make sure not to overcook when you reach step 3. You will notice in some of my recipes, I add raw garlic at the end of my preparation and only cook for about 1 minute. This helps keep that strong garlic taste and flavor intact! I prefer my garlic raw in my meals most of the time. If your stomach can’t handle it, cook garlic for a few minutes before adding onions. If you can handle raw garlic this method is by far the best, especially the aroma it gives out! Also, once green onions have been added, they will slightly soften from the steam. Give it a toss and serve immediately so you can enjoy the fresh and crisp green onions in your dish!

Notes

- Rice is not included in our estimated nutrition facts.
- (Optional) Add very thin orange peal slices and some juice to your glaze when preparing. This will bring out another lovely flavor.
