Soy-Glazed Eggplant Garlic Chicken – Easy Rice Bowl Recipe!
This Soy-Glazed Eggplant Garlic Chicken recipe is my FAVORITE and it takes only 20 MINUTES! 😋 If your taste buds are craving some Chinese food, this recipe is perfect to fulfill your craving! It includes Chicken, Asian eggplants, Veggies, Soy Sauce, Eel sauce, and of course – Garlic and Chili Sauce! If you have these ingredients in your kitchen then it’s time to throw them in a pan and you’ll create this satisfying meal in just 20 minutes!

Chicken Marinade
- 2 lbs dark boneless Chicken Leg meat, chopped
- 2 tablespoons Sesame Oil
- 6 oz Soy Sauce
- 1 teaspoon Sugar
- 1 1/2 teaspoons Black Pepper
- 1 tablespoon Cornstarch
- 1 tablespoon Garlic Powder
Sauce
- 4 oz Soy sauce
- 2 tablespoons Eel Sauce
- 1/2 teaspoon Black Pepper
- 1 tablespoon Chili Garlic Sauce
- 1 teaspoon fresh grated Ginger
- Sesame seeds for garnish
Vegetable Stir-Fry
- 3 Chinese/Japanese Eggplants chopped
- 3 sticks Carrot chopped
- 8 stems diced Green Onions
- 6 chopped Garlic Cloves
Instructions
- In a large bowl, whisk together chopped chicken and the marinade ingredients. Set aside for a few minutes. Cut your eggplants and carrots about 1 1/2″ thick.
- In a large skillet, cook eggplants over medium-high heat for 10 minutes until thoroughly cooked. Remove eggplants and set aside in a bowl. In the same frying pan, cook chicken on medium-high heat until done.Â
- Add eggplants to the chicken and saute for another minute on high heat. Now it’s time to add your sauce ingredients. After placing the sauce ingredients, saute for 1 minute. Now, add garlic and ginger and saute for another minute. Turn off the fire throw in your green onions and allow this to cook with the steam. Add sesame seeds for garnish on top and it’s ready to serve a side with white rice. Don’t forget to drizzle the sauce when serving with rice. Enjoy!Â
Notes
- Make sure not to overcook your chicken.
- Don’t cook green onions. Stir in green onions at the end, it will soften up with the steam of the stir-fry. The green onions give out a fresh and great crisp to every bite when they stay fresh in your stir-fry when serving.

- (Optional)Â Add very thin orange peal slices and some juice to your glaze when preparing. This will bring out another lovely flavor.
