Being Armenian, kebabs have, of course, always been a staple in my home! Growing up, chicken kebabs were an every weekend ordeal and summer tradition, especially when family came to visit.
What makes it even more special is that the recipe I use today is nearly identical to the one I grew up with, just with that one little twist. While I’ve kept the recipe true to its roots for this post, I’ve also enjoyed experimenting with different marinades and styles over the years. If you’re not a fan of mayonnaise, you can switch it to avocado mayo or simply just skip it and add yogurt in its place. But mayonnaise just does it for me; it truly pairs and tenderizes perfectly! No matter the occasion, kebabs remain a go-to dish in our home, something my family always looks forward to!

WHAT TO SERVE WITH KEBOBS
When it comes to serving kebabs, there are so many delicious options to choose from. My family’s preferred choice is over a fluffy bed of rice, which is the simple, classic, and always satisfying option with a nice, simple lemony salad or a Yogurt cucumber salad (Jajukh). But one of my personal favorites, which is a fast and easy way (and a must-try!), is to wrap the kebabs in a warm, crispy pita topped with some fresh chopped cilantro and onions. It might sound unconventional at first, but trust me, one bite, and you’ll be hooked!
Of course, kebabs pair beautifully with a wide variety of sides, and many of my older recipes make perfect accompaniments. Whether you’re putting together a big dinner spread or just looking to round out a meal, these dishes add flavor, texture, and color to your table.

WHAT IS THE DIFFERENCE BETWEEN KEBAB AND SHAWARMA?
People often confuse shawarma and kebabs, and it’s easy to see why they share similar spices, flavors, and cultural roots. However, some key differences set them apart. For example, shawarma is typically made from thin slices of marinated meat stacked on a vertical rotisserie, slowly roasted as it spins, and yes, those tall rotating towers of meat you often see at food stands are shawarma! As it cooks, it’s shaved off in thin strips as it cooks, resulting in tender, flavorful pieces with crispy edges.
Now, Kebobs, on the other hand, are traditionally made from chunks of meat (often with vegetables skewered along with meat) threaded onto skewers and grilled over an open flame. This method gives them a distinct smoky flavor and a slightly charred exterior. While both dishes have deep roots in Middle Eastern cuisine and can use similar seasonings, the major difference lies in how they’re cooked and served. Each has its own rich tradition, and both are absolutely worth savoring in their own way!

Ingredients
- 4 Chicken Breasts
- 1 cup Mayonnaise
- 2 Limes or 1 Lemon
- 1 Tablespoon Dry Cilantro
- 1 Tablespoon Onion Powder
- 1 Tablespoon Garlic Powder
- 1 3/4 Tablespoon Smoked Paprika
- 1 Tablespoon Allspice
- 1 teaspoon Salt (to your taste)
- 2 Onions
- 1 Red bell pepper
- 1 Green bell pepper
- 3 Tablespoons Olive oil
Instructions
- Preheat the oven to 450°F. Slice the chicken breasts as thinly as possible, then cut them into strips about 1½ inches wide and place them in a large bowl.
- Add mayonnaise, lime or lemon juice, cilantro, onion powder, garlic powder, paprika, allspice, and salt. Mix well until the chicken is evenly coated.
- Soak about 12 skewers in water for at least a few minutes to prevent burning. Meanwhile, chop the onions and bell peppers.
- Assemble the kebabs by placing onion and bell pepper pieces at each end to help hold everything in place, then thread 2–3 pieces of chicken in between, repeating until the skewer is full.
- Brush the tops lightly with oil and place the skewers on the center rack of the oven. Bake for about 20 minutes or until the chicken is cooked through. Switch the oven to broil and let them char lightly for 1 minute, turning once to brown evenly on both sides. Remove promptly—do not over-char and enjoy!
