Tender Oven Baked Chicken Kebabs

These mouthwatering Tender Oven-Baked Chicken Kebabs are the perfect solution when you don’t feel like standing outside by the grill. Marinated in my special lemon-and-mayo blend and broiled to perfection, they still deliver that smoky, barbecue-style flavor everyone loves. Don’t let their simple appearance fool you! In addition, they’re paired with sweet, charred bell peppers and onions, making these kebabs even more irresistible. Together, these ingredients create bold, vibrant flavors that set the tone for a truly satisfying meal.


Ingredients

  • 4 Chicken Breasts
  • 1 cup Mayonnaise
  • 2 Limes or 1 Lemon
  • 1 Tablespoon Dry Cilantro
  • 1 Tablespoon Onion Powder
  • 1 Tablespoon Garlic Powder
  • 1 3/4 Tablespoon Smoked Paprika
  • 1 Tablespoon Allspice
  • 1 teaspoon Salt (to your taste)
  • 2 Onions
  • 1 Red bell pepper
  • 1 Green bell pepper
  • 3 Tablespoons Olive oil


Instructions

  1. Preheat the oven to 450°F. Slice the chicken breasts as thinly as possible, then cut them into strips about 1½ inches wide and place them in a large bowl.
  2. Add mayonnaise, lime or lemon juice, cilantro, onion powder, garlic powder, paprika, allspice, and salt. Mix well until the chicken is evenly coated.
  3. Soak about 12 skewers in water for at least a few minutes to prevent burning. Meanwhile, chop the onions and bell peppers.
  4. Assemble the kebabs by placing onion and bell pepper pieces at each end to help hold everything in place, then thread 2–3 pieces of chicken in between, repeating until the skewer is full.
  5. Brush the tops lightly with oil and place the skewers on the center rack of the oven. Bake for about 20 minutes or until the chicken is cooked through. Switch the oven to broil and let them char lightly for 1 minute, turning once to brown evenly on both sides. Remove promptly—do not over-char and enjoy!
