Units Scale

Buttery Nutella Walnut Cream Puff Pastry

  • 11oz 5×5 10 pieces puff pastry
  • 1 cup walnuts
  • 1 cup Nutella
  • 1 teaspoon milk

Instructions

  1. Chop walnuts in a food processor on high speed until finely chopped. Combine crushed Walnuts and Nutella in a bowl. Remove wax paper from the dough and lay it on a lightly floured surface. (Make sure your dough is chilled before prepping) Cut tiny ridges into dough (1/4″ in size) with a knife or a pastry Lattice Roller. Take a new ply of dough and cut it through the center. The pastry will have one solid dough for the base layer and one ridged dough for the top layer.
  2. Spread about 3 tablespoons of Nutella walnut mixture in the center of the base layer. (Leave 1/2″ of space around the edges of the dough to seal it.) With a baking brush, lightly brush the edges of the dough with milk. Place the ridged dough over the bottom layer and press gently to seal.
  3. Bake: Place them on a non-stick pan about 1″ apart and brush 1 beaten egg over the top. Set the oven to 400° and bake for 20 – 25 minutes until puffed up and golden brown.

  • Replacement of Nut Spread: A great alternative to replace spread would be pureed dates or a thick jam.
  • Replace with Dried Dates: Remove the core of the date and blend about 2 cups into a mixer with a dash of vanilla extract.
  • Replace with Jam Filling: Make sure your jam isn’t too watery. Place 1 tablespoon of jam and spread onto each pastry.
  • Freezer Prep: Place pre-made pastries into the freezer on a baking pan and allow this to chill for 25 min. After 25 min, carefully wrap each pastry individually with parchment paper that is lightly coated with all-purpose flour. Once chilled, place them carefully in a ziplock bag. You can store this in the freezer for up to 2 months. When you’re ready to bake them, allow your pastry to thaw out for 20 min. They should be slightly soft to the touch and still cold before placing them into the oven.
