You won’t believe it but after making this pancake recipe a few times, I can honestly say it’s the best I ever had! My family and I wait impatiently for the Fall season to have a nice tower of fluffy fall-flavored pancakes from IHOP. We went through a phase at one point where we loved these pancakes so much it was a demand from my kids to make a batch for dessert, it was so good! Not only would be a weekend breakfast request, it would also be a dessert request!
These pancakes melt in your mouth and it’s so perfect with my warm and comforting cinnamon-fried peaches with homemade nut cluster walnuts!

Every time I tried making these pancakes they came out perfect! What makes these pancakes perfect, is the right amount of baking powder in the pan and oil placed into the pan while frying! I promise you will NEVER go back to boxed pancake mix or want to go out for breakfast ever because it’s so good!
The best part of this recipe is that it makes about 6 large pancakes, and one pancake serves perfectly for one individual if you have leftovers they taste great the next day too!
🍴INGREDIENTS YOU’LL NEED TO MAKE THE BEST FLUFFY PANCAKES

FOR PANCAKE BATTER
- All-purpose Flour
- Sugar
- Vanilla
- Salt
- Baking Powder
- Egg
- Milk
- Water
- Unsalted Butter (melted)
- Vegetable Oil (for frying)
FOR THE TOPPINGS
- Peaches
- Walnuts
- Brown Sugar
- Butter
- Cinnamon
STEPS TO MAKE THE BEST FLUFFY PANCAKES
STEPS TO COOK TOPPINGS FIRST!
Step 1: Place a small skillet over a medium fire, and melt butter, cinnamon, and brown sugar. Once melted add in your walnuts. Turn heat to low and fry walnuts for a few minutes by tossing consistently. Once done, place it into a separate plate to cool off. Next, place sliced peaches into the pan and fry on both sides until slightly browned. Remove and place into a platter to cool off.
STEPS TO COOK PANCAKES!
Step 1: Firstly, melt butter over a low fire heat until lightly browned and set aside to cool.
Step 2: Secondly, whisk together in a large bowl all your dry ingredients flour, baking powder, sugar, and salt. In another separate bowl, whisk together wet ingredients: milk, and egg, and mix in melted butter (make sure your butter has cooled off before pouring! You will notice the butter will slightly break and become solidified – that’s ok just keep whisking).
Step 3: Thirdly, gradually pour wet ingredients into your dry ingredients and repeatedly whisk gently. Whisk until both have combined. Eventually, you will notice some lumps form, push against, and mix in. Gradually add water until you reach a slightly thickened watery texture (see the video for an example of consistency). Set the batter aside to rest for a few minutes.
Step 4: Fourthly, place a small to medium-sized non-stick skillet over a medium-high fire and place oil into the pan. Make sure your oil is warmed up before pouring your pancake batter in.
Step 5: Lastly, depending on the size of your skillet, pour about 1/2 cup of pancake batter into the skillet, lift the pan, and rotate in a swirl motion to spread the batter evenly around the pan into about 6″ round pancake. Cook for 2-3 minutes on one side. You will notice some bubbles start to form on top of the pancake, wait until you can lift one side of the pancake with a spatula carefully. Flip over to the other side, and cook for another few minutes until browned and done! Top with your toppings and enjoy!

Ingredients
FOR THE PANCAKE BATTER
- 1 1/2 cups + 1 teaspoon All-purpose Flour
- 2 tablespoons Sugar
- 1/2 teaspoon Vanilla
- 3/4 teaspoon Salt
- 1 tablespoon Baking Powder
- 1 large Egg
- 1 1/4 whole Milk
- 2 tablespoons Water
- 1 tablespoon of melted Unsalted Butter
- Vegetable Oil (for frying)
Note: You can also add cinnamon to the pancake batter if you exclude the nut cluster in this recipe.

- 2 Peaches (sliced)
- 1/2 cup of Walnuts
- 2 tablespoons of Brown Sugar
- 2 tablespoons of Butter
- 1/4 teaspoon of Cinnamon
