The Best Fluffy Pancakes
These are the Best pancakes I have ever made! I got your breakfast covered, I promise it’s superb! Super fluffy, moist, and easy to make and done in just 30 minutes! These golden pancakes are topped with my favorite warm and comforting homemade nut cluster walnuts and cinnamon-fried peaches! Its flavors are perfect for the fall, it’s bursting with flavor!

FOR THE PANCAKE BATTER
- 1 1/2 cups + 1 teaspoon All-purpose Flour
- 2 tablespoons Sugar
- 1/2 teaspoon Vanilla
- 3/4 teaspoon Salt
- 1 tablespoon Baking Powder
- 1 large Egg
- 1 1/4 whole Milk
- 2 tablespoons Water
- 1 tablespoon of melted Unsalted Butter
- Vegetable Oil (for frying)
Note: You can also add cinnamon to the pancake batter if you exclude the nut cluster in this recipe.
FOR THE TOPPINGS
- 2 Peaches (sliced)
- 1/2 cup of Walnuts
- 2 tablespoons of Brown Sugar
- 2 tablespoons of Butter
- 1/4 teaspoon of Cinnamon
Instructions
- Place a small skillet over a medium fire, and melt butter, cinnamon, and brown sugar. Once melted add in your walnuts. Turn heat to low and fry walnuts for a few minutes by tossing consistently. Once done, place it into a separate plate to cool off. Next, place sliced peaches into the pan and fry on both sides until slightly browned. Remove and place into a platter to cool off.
- Firstly, melt butter over a low fire heat until lightly browned and set aside to cool.
- Secondly, whisk together in a large bowl all your dry ingredients flour, baking powder, sugar, and salt. In another separate bowl, whisk together wet ingredients: milk, and egg, and mix in melted butter (make sure your butter has cooled off before pouring! You will notice the butter will slightly break and become solidified – that’s ok just keep whisking).
- Thirdly, gradually pour wet ingredients into your dry ingredients and repeatedly whisk gently. Whisk until both have combined. Eventually, you will notice some lumps form, push against, and mix in. Gradually add water until you reach a slightly thickened watery texture (see the video for an example of consistency). Set the batter aside to rest for a few minutes.
- Fourthly, place a small to medium-sized non-stick skillet over a medium-high fire and place oil into the pan. Make sure your oil is warmed up before pouring your pancake batter in.
- Lastly, depending on the size of your skillet, pour about 1/2 cup of pancake batter into the skillet, lift the pan, and rotate in a swirl motion to spread the batter evenly around the pan into about 6″ round pancake. Cook for 2-3 minutes on one side. You will notice some bubbles start to form on top of the pancake, wait until you can lift one side of the pancake with a spatula carefully. Flip over to the other side, and cook for another few minutes until browned and done! Top with your toppings and enjoy!
