Are you ready for fireworks in your mouth? Because almost everyone who has tried my sandwich has been frenzied and astonished at how amazing it tastes! This delightful recipe was inspired by a local sandwich deli shop that unfortunately closed down and was located in my hometown! It was a shock to me that this place shut down because they had such a great menu, so I decided to recreate this recipe myself, my way! So let me tell you, this sandwich I used to order before was made with a lightly toasted bagel with a cream cheese filling.
I have to say, it’s so good with Lebni! Lebni is a sour-tasting cream cheese spread. I feel it’s in between yogurt and sour cream. You can swap the Lebni with any spreadable cheese of your choice. You can also create this as a vegan-styled sandwich by adding a vegan cashew paste or any vegan spread of your choice.
Even though this sandwich gives off a lunch vibe, I crave it for breakfast and dinner as well! I would want it twice in one day sometimes! It’s sooo good! I loved it so much! Instead, I created it with my favorite rustic stone-fired seeded bread with my favorite ingredients!

Of course, the looks of this sandwich are as good as it tastes! Once you take a bite out of this sandwich, it will be a lifestyle changer! So light, and yet so meaty without the meat!
Ingredients
- 2 slices of Rustic Stone-Fire Bread
- 2 tablespoons Lebni
- 1/4 cup Walnuts
- Red Onions slices
- 1/2 small Tomatoes
- 4–6 large Jalapeno Garlic Stuffed Green Olives
- 1/4 cup Feta Cheese
- Handful of Arugula
Instructions
- Toast two slices of bread in a toaster oven, wait a few minutes to cool off toast.
- Layer your sandwich with lebni, onions, walnuts, feta, olives, arugula, tomato, salt and pepper.
- Gently, press your top bread on top of your sandwich, when the sandwich is secure support it with your fingertips and cut through the sandwich with a knife, and enjoy!

Yes! Just layer your favorite deli meat or any meat alternative in place of the walnuts. I also think walnuts would taste great along with the deli meat!
The toast we used in this recipe is not gluten-free, but you can swap it out with gluten-free bread or make it yourself. You can also replace the Lebni with a daily-free paste. I also think vegan cashew spread with pair perfectly with this sandwich!
