Description

The Best Spinach Feta Borek – Phyllo Dough

Have you ever tried The Best Spinach Feta Borek – Phyllo Dough? As a matter of fact, today is the day, especially if you love anything crispy! Basically, this spinach, feta spiral borek will need time and patience to shape every sheet of dough into a spiral (round) form and manicure it to perfection. After all, with it being easy to make you also need to give it some LOVE!


Ingredients

  • 1 1/2 cup Feta cheese
  • 1/2 cup Olives
  • 2 cups baby Spinach
  • 1 Onion
  • 1 Lime
  • 1 Egg white
  • 1 stick of Butter
  • Pinch of fresh Mint leafs
  • 1 package of Phyllo dough
  • 2 pinches of Salt
  • 2 teaspoons Black pepper
  • 2 pinches of Paprika
  • Roasted Sesame seeds

Instructions

  1. Start by chopping your onions and set aside. Add olive oil to a pan and set to high heat. Once oil begins to warm up add onions. Saute onions until golden brown. Add spinach and saute for less than one minute. Add salt, pepper, paprika and mix.
  2. Remove from the fire and allow it to cool off. In a bowl, add feta cheese, sauteed spinach, olives, lime juice, egg white, and mix this all together.
  3. Start by brushing a light amount of butter over each piece of phyllo dough. Repeat this process and place each buttered sheet on top of each other. At this point, you should be with 3 layers of buttered phyllo dough.
  4. Spread your mixture and line it up at the edge of the dough. Roll the dough over lightly but not too tight. Spread butter over the dough as you roll it over.
  5. In a non-stick round baking dish, place a light coat of butter around the base. Very carefully roll the dough inwards. The dough should be shaped in a spiral form and should be easy to mold with the warmth of your hands. Tuck the end underneath. Place the spiral dough in a baking dish, hold it in place, and do not release until the form keeps its shape. The warmth of your hands will keep the spiral dough together.
  6. Repeat steps 3-5 and continue adding to your spiral dough. Lightly brush melted butter on top of the spiral dough. Sprinkle roasted sesames on top and bake in the oven at 375° degrees for 35-45 minutes until golden brown.

Notes

  • If the phyllo dough sheets split apart as you work with them, overlap the broken sheets piece them together, and continue to work with it. 
  • Make sure to cover your phyllo dough with plastic wrap and place a towel over the dough on the sheets that aren’t being used at the moment.
  • While the roll is baking, rotate the dish every 15 minutes.
